Kildara - Macaloney's Island Distillery & Twa Dogs Brewery

House Character & Tasting Notes 

This island whisky is from our triple-distilled single pot still range – triple-distilled using only the best local unmalted and malted barley available. Our patient, yet purposeful, triple-distillation produces a complex, layered and balanced new-make spirit. Dr. Swan described our original new-make which trickles off our copper pot stills as “the best that I have tasted in any distillery at this stage, super fruity.” This triple-distillate is even smoother and fruitier! Kildara, our Whiskymaker’s Signature Expression, was married from a select combination of Kentucky Bourbon casks, Spanish Oloroso barriques, virgin American casks, and Spanish Pedro Ximénez (PX) barriques. The result is a full bodied, triple-distilled single pot still, island whisky with pronounced Oloroso and PX notes including dried fruit cake, vanilla crème laced with cinnamon, demerara sugar, and old seasoned leather notes. Abundant tropical fruits include candied orange, dried apricot, figs, ripe blackberries, blackcurrant jam, dried raisins and roasted nuts. The complexity continues with barley, malt and dried hay, butterscotch, milk chocolate, light tobacco and ocean breeze. The palate is velvety-soft, resplendent with full bodied Sherry and tropical fruit. Oatmeal develops into oak spices, coffee, dark chocolate orange, nectarines, stewed plums, blackcurrant, red currant and sultana’s, coming together as sweet dark fruitcake and honey. The finish presents dried fruit with a hint of salt and dulse, lingering oak and more Sherry, ending with hazelnut and almond raspberry pie with a drizzle of dark chocolate.

History and Tradition 

Inspired by his native Scotland, his Lochaber and Islay ancestors, and ancient Irish roots, our Master Whiskymaker Dr. Graeme Macaloney has created a unique range of whiskies. Our distillery’s ‘classic single malt whiskies evoke fond memories of his youth. Our ‘peated’ single malt whiskies, uniquely peat-smoked at our distillery, herald back to his Ileach seventh-great-grandfather, whilst these ‘triple-distilled single potstill’ whiskies give tribute to his Antrim and ancient 7th century Leinster-Irish roots. Kildara: The Church of the Oak Trees Our Master Whiskymaker’s ancestors lived in and around Kildara in Leinster, Ireland in the 7th century. They were related to the High Kings of Leinster who reigned for over 300 years. Kildara was the leading church of Leinster and all Ireland at the time, being founded by St. Brigid. She was also widely revered in Scotland as St. Bride when the Macaloney’s migrated to Scotland. As sons of one of Europe’s oldest royal dynasties who celebrated St. Brigid and her church of the oak trees, it is inevitable that the Macaloney’s show great respect for ancient traditions, and use only the best oak casks for their whiskymaking. This Whiskymakers Signature Expression celebrates the subtle influence of oak by marrying together potstill whiskies from four different types of oak cask.
