This island whisky comes from our triple-distilled single pot still range –triple-distilled using only the best local unmalted and malted barley. Our patient, yet purposeful, triple-distillation produces a complex, layered and balanced new-make spirit. Dr. Swan described our original new-makewhich trickles o our copper pot stills as “the best that I have tasted inany distillery at this stage, super fruity.” This triple-distillate is evensmoother and fruitier!.

Peated Kildara, our Whiskymaker’s delicately peated Signature Expression, was married from a select combination of Bourbon casks, Portuguese red wine barriques, Virgin American casks, Spanish Pedro Ximénez barriques and Spanish Oloroso barriques in ordert o produce a layered complexity.

Our pot-still mash-bill recipe typically has 60% farmers barley and 40% malted barley, all locally grown. For this lightly peated expression we peat-smoke the malted barley using local peat from the Olympic Peninsula in Washington State, U.S.A. The smoking is uniquely done at our distillery using traditional methods, resulting in a light, delicate 21 ppm peat-smoke level.

The nose is classic pot-still with bags of fruit and delicatewood smoke. Cream soda, patisserie custard, marsipan, cream toee, Cornish clotted cream and wholemeal biscuit yield to heather honey, strawberry jam, and sweet potpourri. The finish has coconut husk, teak furniture, pine resin, and sandalwood embers.

 

The palate is velvety with oat muesli, crystal malt, vanilla, orange liqueur, ripe apricot, prunes and papaya, leading to crisp fresh snow-peas, pistachionuts, smoked hazelnuts, and sweet caramel toee. The finish presents fragrant pipe tobacco, bonfire embers, coastal pine forest and sea spray
