This is our single cask peated whisky series which allows whisky enthusiasts and new-comers alike to explore the unique terroir of peat from a variety of peat bogs around the world. It also explores the impact of oak casks used for maturation from a variety of wines.
Peat smoking contributes the truest 'terroir in whisky appreciation. Therefore, our Peat Project™ range allows you to explore how peats from Washington USA, Canada, and Scotland differ in their unique flavour profiles.
Distilled using local British Columbia barley, peat-smoked at our distillery to 54 ppm with local peat from the Olympic Peninsula, it was then fully matured in a carefully selected Spanish Oloroso cask, blanketed with fresh maritime island air.
The nose has an abundance of tropical fruit, Sherry, and floral notes with light peat and seaside breeze, including dried apricot, potpourri, rose petals, fruitcake, vanilla, treacle, red liquorice, burnt heather, and cellared oak. This leads to maritime notes reminiscent of the beach at low tide.
The palate is creamy with medium peat smoke, bonfire, sweet Sherry, candied orange, dried figs, fennel, perfume, sweet pea and rose water, developing to dark chocolate, oak spices, coffee, and dulse.
The finish is dry with lingering peat smoke and a hint of salt befitting our island location.
