Our Peated Kildara whisky comes from our triple-distilled single pot range - using only the best local unmalted and malted barley.
Our pot-still mash-bill recipe has 60% farmers barley and 40% malted barley, all locally grown. For this lightly peated expression we peat-smoke using peat from the Olympic Peninsula uniquely done at our distillery using traditional methods.
The resulting nose is a classic pot-still with bags of fruit and delicate wood smoke. Cream soda, patisserie custard, marzipan, cream toffee, Cornish clotted cream and wholemeal biscuit yield to heather honey, strawberry jam, and sweet potpourri. The finish has coconut husk, teak furniture and sandalwood embers.
The palate is velvety with oat muesli, crystal malt, vanilla, orange liqueur, ripe apricot, prunes and papaya, leading to crisp fresh snow-peas, pistachio nuts, smoked hazelnuts and sweet caramel toffee. The finish presents fragrant pipe tobacco, bonfire embers, coastal pine forest and sea spray.
